Spicy Pineapple Stirfry

This is a dish which makes a great accompaniment to a strong meat/fish dish. Think of this more like a chutney if you can’t get past the whole cooking a fruit as a hot meal. Cooking pineapples really boost the juiciness as well.

Essential components:
• Chili pepper, cut into thin slices
• Pineapple, cut into bite size pieces

From the pantry and other stuff:
• Oil
• Sugar
• Garlic, cut into slices
• Salt

Method:
• On a really hot pan, add oil, then chili and garlic
• After a few seconds, add the pineapple slices, sugar, and a small pinch of salt
• Cook for about 2 minutes while tossing frequently, this is important or the garlic will burn
• Lower the heat, taste and adjust if necessary, then serve

Tips and thoughts:
• You do need to add sugar into this dish because the cooking does tend to reduce the natural sweetness of the pineapple
